Sublimation – the technology of removing water from the fresh green peas by vacuum method. Sublimation can save up to 80% of the nutrients. Before canning pea is restored to its original shape and weight by immersion in water for the certain period of time. Further technology of production is the same as for fresh green pea of cerebral sort.
